, Baby it’s cold outside! If you’re reading this from a state other than Texas, you might not be aware that today is a big day for us here in Houston. It is snowing! That’s right! Snow in Houston, Texas. Who says we can’t have a white Christmas in Houston?
Because we’re not used to this white stuff down here, most Houstonians will be spending their weekend indoors sheltered from the torrential snow storm otherwise known as an inch or two of snow. While you and your family are huddled up around the fireplace, try a few healthy recipes from our registered dietician, Shelley Johnson. These are perfect for a cozy winter weekend!
, 2 lbs. boneless, skinless chicken breast
1 (16 oz.) jar of your favorite salsa (use El Pinto if on the Yeast-Free Diet)
1 Tbsp. chili powder
1 Tsp. low sodium chicken bouillon concentrate
1 cup canned black beans (add more if desired)
3 oz. Monterey jack cheese (omit if on the Yeast-Free Diet)
6 Tbsp. light sour cream (optional, omit if on the Yeast-Free Diet), Place the chicken in crock pot. In a bowl, stir together salsa, chili powder and chicken bouillon until well mixed. Pour mixture over chicken. Set crock pot on low for 7 hours. When time is up, shred chicken with a fork and stir in black beans. Continue to cook on low heat for 15-20 minutes or until beans are hot. Serve topped with cheese and sour cream if desired. Serves 6.

, 1 1/2 cups Blue Diamond “Almond Breeze” unsweetened, chocolate flavor
1 Tbsp. of cocoa powder
2 Tbsp. of Sweet-n-Natural
4 drops or 1/8 tsp. of mint extract (non-alcoholic)
In a closed jar or with a blender, blend all the ingredients until well-blended. Warm in small sauce pan or microwave. Pour into two small mugs and enjoy! Makes 12 oz.
